Busの複数形はbusesとbussesです。
どっちでも文法的には正しいです。
しかし1900年以来、busesの方がbussesより多く使われています。
グラフを見ると、約25倍多く使われていますね。
何故busesが歴史に選ばれたのか分かりませんが、20世紀以降は完全にbusesを人々は使っています。
ですから、このトレンドに合わせて、busの複数形はbusesを使うのをお勧めです。

文法的には両方大丈夫です。

しかし、通常アメリカ英語では、複数でもbroccoliを使うのが普通です。
ですから、
I’m growing broccoli in my garden.
文法的には、I”m growing 5 broccolis in my garden. でも正しいですが、broccoliを使うのをお勧めです。
因に、形容詞としてbroccoliを使う場合は、-sを付けません。
This broccoli casserole is delicious! が正しい使い方で、
This broccolis casserole is delicious! は間違っています。

Formerとlatterには、動詞の活用は単数形も複数形もありでしょうか？
例えば、
Mr. Whiskers(a cat) found a cockroach and some mice in the basement. He loathed the latter.
この文(2nd sentence)では、heがsubjectなので簡単ですね。Former/latterに動詞を活用する必要がないですね。
Boomer and Bruno were both heroes but only the latter is remembered today.
Bruno=the latterなのでisは単数形で良いですね。
しかし、
The wounds from the violent fights with the neighborhood dogs and the years of eating candies and potato chips instead of nutritious cat food were the major causes of Mr. Whisker’s downfall. The latter were avoidable: the former were not.
もありです。
Fomerとlatterの動詞活用で複数形も可能です。
生徒さんに聞かれて、調べなければいけなっかたです。勉強になりました。ネイティブの人でも単数形だけが正しいと言う人も多いと思います。
